Sugar from sugar cane, sugar beets, and corn syrup wasn't available. Fortunately the trees and the bees supplied superb, although labor intensive alternatives. For now, we'll talk about the trees.
The Indians had been collecting and boiling maple sap long before the paleface arrived. They collected sap in birchbark containers. Then they placed it in a hollowed out log, started a roaring fire and threw large stones in the fire. When the stones were hot, they fished them out of the fire, and transporting them with two sticks dropped them into the sap. Eventually you got maple syrup.
You can still get maple syrup and maple sugar. Once you've tried it, you'll be hooked for life! It's a truly natural sweetner with no additives or chemicals of any kind.
Don't be fooled by the junk in the stores that isn't pure maple syrup. I've tried them, and compared to the real stuff it's like eating used motor oil!
